Mount Morris, Pennsylvania -- From the outside, Rising Creek Bakery & Cafe looks like a typical New York City cafe. From the inside the chairs, booths and lightning give a similar vibe. But after taking a look out of one of the bakery's many windows, it is easy to see Rising Creek is a long way from the Big Apple.

"You're on the banks of Dunkard Creek. And that's one reason we chose this spot because it's beautiful along the banks of Dunkard Creek. And it's wonderful for people to get a sense of that, to come into Mount Morris," Jenny Bardwell, co-owner of Rising Creek, said.

Bardwell and her friend Susan Brown had dreamed of opening a bakery for many years, which is why more than a year ago they opened up shop in Mount Morris.

"It's inspiring to know that dreams can come true, because this really is a dream that we talked about for years and here it is. It's happening, so every day it's just really nice to know that we can come and do something that we've thought about for so many years," Brown said.

Rising Creek opened with one particular goal in mind, preserving tradition. In fact, the motto at Rising Creek is "traditional recipes with a modern twist," something that keeps customers coming back.

Customers can find traditional raisin cookies, berry cream pies, cheesecakes, doughnuts and plenty of other treats, but the specialty at the bakery is salt rising bread.

"It's got fantastic flavor. The flavor, toasted and on grilled cheese sandwiches is wonderful. And salt rising bread is something, it's like a lost art. The young people aren't learning how to make it, so we're trying to preserve that tradition," Bardwell said.

Every day, the bakery and cafe serves up homemade grilled cheese sandwiches on the salt rising bread, and Bardwell says the salt rising bread is one of the most popular items the bakery offers.

Rising Creek even attracts students from Pierpont Community and Technical College's culinary arts program.

"We learn from them. Because they're coming with some new, modern recipes and skills that the school is teaching them, so they share them with us," Bardwell said.

Many of the recipes at Rising Creek are rooted in tradition.

Brown says that being able to provide customers with cookies and cakes made from her family recipes is one of the reasons she loves going to work.

"People come here and they feel like it's sort of a homey place.

As the host of this month's bread baking day event, i was given the chance to choose the theme.  i have a coworker who talks about the salt rising bread his grandmother made.  they called it stinky bread because of the cheesy scent that it has.  i have always wanted to try it but have been reluctant because many of the recipes tell you how hard it is to get the starter going.  james beard, in his book beard on bread, almost tells the reader not to bother with it due to the fickle nature of the starter.  honestly, i have made three batches of this bread and all three have worked perfectly. a recent trip to the whole foods across town gave me an opportunity to pick up some different flours.  i chose buckwheat flour and organic blue cornmeal.  rather than use the standard cornmeal for the starter, i went with blue cornmeal and the recipe for salt rising bread #2 .   it took approximately 24 hours for the starter to become active. to make the sponge, i followed the recipe but made a substitution.  i measured 2 tablespoons of flax seed meal, placed it into a measuring cup and then filled the cup with buckwheat flour.  this mixture was added to the sponge in place of one cup of flour.  i then proceeded with the recipe as it is written-use the link above for the recipe.  the photo shows the sponge as it looked after sitting overnight.
